Happy Monday, yesterday I had a Friendsgiving celebration. Tonight, I have a Friendsgiving celebration with my bible study. Excited to celebrate with those girls too. Since Thanksgiving is on THURSDAY, I wanted to share with you some Thanksgiving Recipes I love.
As you may know, I’m a pescetarian, so turkey isn’t my go-to on Thanksgiving. But don’t worry, between rolls, salads, side dishes, and dessert, I always get PLENTY to eat. I can always find some great vegetarian options on our Thanksgiving spread. When I’m cooking at home for one, I don’t love to make extravagant recipes. It’s not very exciting to make a fancy meal that I will eat 3-4 meals in a row, I get sick of them. However, I really love cooking for group events or potlucks!
Thanksgiving Recipes I love
- Green bean casserole- I’ve always been a huge fan of green bean casserole, and I will probably make a lightened up version with homemade green beans for our thanksgiving. Speaking of that, I should probably get in touch with my aunt about the big day. I’ve learned that green bean casserole isn’t a staple for everyone, but this Minnesotan loves her casseroles
- Mashed potatoes- OBVIOUSLY. Growing up, we used to eat mashed potatoes a few times a month with Sunday dinner. Now, I rarely have them, but they are so tasty. I made FitFoodieFinds Lightened Up Herby Mashed Potatoes for Friendsgiving #2.
- Honey-Dijon Roasted Vegetables- I made this Fitnessista recipe once last year, and it was a big hit. I love roasted vegetables for all occasions, but I don’t usually cook with these ones. It was fun to try something new.
- STUFFING- Personally, I could survive on Thanksgiving day on Stuffing alone. It’s always my favorite bready, vegetable, herby goodness. I’ve never made it before, but I made a rendition last night. It turned out really good! Thanks Running in a Skirt for the vegetarian stuffing recipe.
