Happy Monday! It was a great weekend in Denver, it was warm out and I did a triathlon in Boulder! More to come on that later! 🙂 Sunday was spent at church, errands, cooking, and cleaning my apartment. The washer and dryer went out in my building, so no laundry… boo. Wanted to share some photos lately with you! Also Thinking out loud with Amanda today!


Went to a bridal shower in Dallas for a great friend. I found this dress at Patterns and Pops which is one of my favorite shops in Denver! P&P opened a brick and mortar store in April of 2017. My friend Kristin’s wedding is coming up in a couple weekends!

Made this Green Goddess Lasagna from Broma Bakery a couple weeks ago! It was really delicious!


We had a random May snowstorm in Denver. Of course it melted the next day, but it was pretty crazy to walk outside to snow! Oh Denver spring…



This is one of my go to soup recipes. I start with Trader Joe’s Lentil soup and I add whatever I have to it. This version had frozen corn and kale and couscous. It made 3-4 servings that way.

True Food Kitchen is my favorite restaurant ever. Their torched avocado appetizer is really amazing and I love their red chili noodles! I went to True Food with two girls from bible study the other week! It was delicious!

Went to OTF Uptown in Minneapolis with my friend Abby. Abby is doing Grandma’s Marathon in a couple weeks. This class was so hard! 2 group OTF is different than 3 group and its own challenge.

Colfax Marathon Relay with work! I did the race with 4 coworkers and we had a lot of fun. My company had a tent for everyone to hang out after the race.


Now that tri training is over, I’m going to miss mornings at the pool. I might have to keep this up during marathon training. We will see!

Some other updates:

Food- I’ve had a lot of birthday dinners or work dinners recently. I love trying new restaurants or old favorites around town. But I haven’t been able to cook as much as usual. I recently purchased the Healthy Glow Guide and there are a ton of great recipes in there. A few that I’ve tried are Whole Wheat Pasta Primavera, Open Faced Avocado Egg Salad, and Stacked Veggie Enchilada Pie. This week I’m making the Roasted Garlic Black Bean Burger. The project I’m on right now offers free lunch, so I haven’t been making lunches. Which is AWESOME. But with being out of town on the weekends, I haven’t cooked as much. Hahaha because I get so sick of cooking both lunches and dinners sometimes. The grass is always greener right?

Friends- A couple weekends ago I went to a bachelorette party in southern Colorado. We went hiking and to the Great Sand Dunes National Park. This upcoming weekend I’m visiting a few friends in southwestern Wisconsin. I’m flying in and out of Milwaukee for this trip. My two friends are from small towns, and I can’t wait to explore!

Books- I’ve been catching up on my book club books recently. I read- Lilac Girls by Martha Hall which I loved!! The characters were awesome, and it’s a historical based fiction book about WWII. I highly recommend it. My book club is reading The Immortal Life of Henrietta Lacks. I read this book in college during a university big read, and I’m excited to get back into it. I think I read it in like 2009.

Workouts- I finished my triathlon on Saturday. I can’t wait to share more about it with you! Wahoo it was a big day! One of my friends started training for Chicago Marathon this week, and I’m waiting until 6/12 to start my training program. This week I was into workout classes to break up my schedule. A couple OTF classes at different times with different instructors, and then a Transform Colorado lagree class with a friend. I’m going to follow a Hal Higdon plan for this marathon that incorporates speed workouts. Hoping for success with this one. I’m also considering cutting back on alcohol during the week for training. So tempting though when its nice in the summer time. Summertime and after work patio beers go together.
