Parsnip Squash Risotto Braised Greens

PreFare meals is a meal delivery service offered in Denver, Colorado. This company allows you to be the chef, and make a meal within 15 minutes. The service began in summer 2015 and is based in Denver. It is as easy to use this service as- Order, Cook, and Enjoy.

What I have ordered before-

Crab cakes with a house sriracha aioli, over a bed of summer greens tossed with house made champagne vinaigrette- these crab cakes were really delicious and they were easy to make. I am hoping to make more fish meals in the next few months. Typically, I only eat fish at restaurants, but cooking fish is so easy! I’d love to incorporate fish into my meal planning.

Butternut squash risotto with basil, Parmesan cheese, and caprese salad- Risotto is one of my favorite foods, but once again, I never cook it myself. PreFare has really helped me to make it at home! I love that this risotto is precooked a bit, so it still cooks really quickly!

This week’s order-

  • Cod Vera Cruz with poblano chili black beans over coconut rice combined with an olive lime vinaigrette (GF)- I liked the veracruz sauce which was kind of like salsa! It was delish!PreFare Meals Cod Veracruz
  • Parsnip, forest mushrooms, and tarragon risotto served with garlic and balsamic braised greens (GF)- This one was really good! The risotto with fresh tarragon had really great flavor. The braised greens tasted great with garlic!Parnsip Risotto with Braised Greens
Reasons I like it.

-Convenience, I don’t have to go to the grocery store
-Quick to make, some of the other meal delivery services require a lot of chopping and usually take close to an hour to make the meals.
-Fairly local- the Company is based in Denver which cuts down on food transportation expenses and carbon emissions. I think this company helps me “vote with my dollar” and work with a local company.
-Customizable options, for vegetarians and various meal plans– see below!

Saturday- 4.5 mile hike at Rocky Mountain National Park, more to come on that next week
Sunday- 3.5 mile run walk around the park
Monday- off day
Tuesday- 1/2 hour run walk to run errands in the morning
Wednesday- 2 Jillian Michaels 30 day shred classes while watching the Cubs. GO CUBS. I’m happy for Chicago and my friends and family who live there!
Thursday- OrangeTheory Fitness- lots of all outs in this class, it was a great one!
