Hi everyone! It’s been awhile since the last time we talked. Last weekend, I spent a few days in Northern Wisconsin. We were in Land O’ Lakes and we stayed at a quaint resort called Sunrise Lodge. The cell phone and wifi service was a little spotty during this time, so sorry I wasn’t too active online. We had a lot of fun family time while I was up there, and we spent a lot of time relaxing. The travel days were long from Denver to a 5 hour car ride, but it was definitely worth it. It’s very rare for me to take a day off of work and actually relax, so I was happy for this time.

This week, I wanted to chat with you about one of my favorite kitchen gadgets- The Inspiralizer! In the last year, spiralizing vegetables has become very popular as a way to decrease carbs in your diet and still get a pasta like taste. For me, I wanted to try the trend, and I bought a hand held spiralizer in the fall. I also bought Ali M’s cookbook– Inspiralized. I loved all the recipes in the book.

My go to way to eat Zucchini Noodles is with a little ranch dressing and parmesan. They are easy to make and quick to cook which I really love. It’s a simple meal or side dish that leaves me feeling good about my food decisions.

I know that carbs have been through the ringer recently, and I’m not here to hate on carbs, but I choose to avoid them when possible. Don’t get me wrong, I love a good sandwich on nice bread from a restaurant, but I try to avoid cooking with bread during the week and at home.

The Inspiralizer

Going back to the Inspiralizer, I came across Ali on social media last fall, and i love all the content she produces. Her product-The Inspiralizer is the best on the market and it really works for spiralizing harder vegetables. I have made sweet potato noodles which were really difficult on my old spiralizer.
